- 250g (8oz) lentils. Easiest if these are precooked (250g is dry weight). Red lentils are simple but you can use any kind.
- 1 onion, chopped
- 1/2 tsp turmeric
- 2 tsp ground coriander
- 450ml water
- 1 tin tomatoes
- 1 green chilli, chopped (Optional; or dried red chilli, or (not quite so good) 1/2 tsp curry powder)
- Salt*, pepper
- Handful of fresh coriander finely chopped (optional)
'Fry' turmeric and coriander paste in a little oil - take care not to burn the ingredients though - then the onion and chilli. Add lentils and water and cook for 5-10 minutes. Add tin of tomatoes and keep it cooking another 10 mins. Season to taste.
Add finely chopped coriander at the end if you like - non-traditional and optional.
*To make it even easier, a shortcut uses curry paste, e.g. this easy dhal recipe from waitrose.com But if you make it yourself, it can be low salt. Increase the other flavourings and you won't notice. Wikipedia on Dhal/Daal/Dahl
