Chocolate pudding |

Serves 6. Only 400 cals per serving.
Preheat the oven to 160C (gas mark 3).
- 100g (4oz) plain flour
- 2 tsp baking powder
- 175g (6oz) caster or granulated white sugar
- 100g (4oz) plain chocolate, melted
- 2 tbsp butter, melted.
- 125mls (1/4 pint) milk
- 50g (2oz) brown sugar
- 50g (2oz) caster sugar
- 3 tbsp cocoa powder
- 175ml (7 fl oz) cold water
Sieve together flour and baking powder and stir in 6oz white sugar, melted chocolate and melted butter (microwave chocolate with butter in a bowl, give 20sec then shorter bursts and stir between). Blend in the milk.
Pour the mixture into a buttered 750ml (1.5pt) dish. Sprinkle with layers of brown sugar, caster sugar, and cocoa. Pour over the water.
Bake for approx 1h until risen and set. A chocolate sauce will form under the sponge.
For a party, multiply up the quantities and use a (very clean) large roasting tin. Recipe slightly modified from one in an Asda magazine in a year when these ingredients cost 19p per person.
